Bellevue Scores a Katsu Burger; Look Inside Manolin

CHEF SHUFFLES -- Seven year restaurant vet Derek May has landed at Percy's & Co. in Ballard. The chef's resume includes AQUA and Sushi Ran in San Francisco, How to Cook a Wolf, Anchovies & Olives, and most recently, Quinn's, where he was chef de cuisine. The new menu heads straight to Southern and Creole territory -- think pickled fried okra, fried chicken with red beans and rice, and chicken and sausage gumbo.

EATER INSIDE -- Manolin opens today on Stone Way, and Eater has a preview of the space. The restaurant will serve wood-fired fish, ceviche, and crudo from former The Walrus and the Carpenter GM Joe Sundberg and Whale Wins alum Rachel Johnson.

OPENING ALERT -- Beloved burger joint Katsu Burger has opened a Bellevue outpost. The Georgetown-based restaurant closed in August; it was then bought and re-opened by Stephanie Kang. Kang promised more locations, and she's making good.
